Where do the matchups come from?

You add them yourself. Type in the two sides and a start time, and everyone at the table makes a call before it begins. The app never pulls schedules or results from the internet.

Why can't I change my call anymore?

Calls lock once the start time you entered has passed, so nobody can switch sides after the fact. If you typed the wrong time, edit the matchup before it starts.

I reinstalled and my rounds are gone.

Rounds are stored only on the device you play on. There is no account and no sync, so removing the app also removes its saved rounds.
